Interesting article.
Part of the reason for the hurry-up is to force the defense into making a mistake. Forcing the officials to hurry up could also force them into making a mistake. It is good that the officials control the tempo, until at least there is a genuine reason to hurry up.
What is the best way to end this frantic hurry-up offense all game? Simple. Bring back the :25 second clock and have the referee hack the ball in on every down.

If the NFL does that, then the U will have to return to the defensive backfield, and I think that the U in the offensive backfield has worked very well. Also, teams may try to delay the ready-to-play whistle by occupying the R.
