Was it part of the mechanics back them to hop around a lot? Sure seems like it.

The prevailing wisdom at the time was the closer the official was to the play, the better he could call it. So there was a lot of jumping over and around players as the official chased the ball carrier.
The prevailing wisdom today is to stay back for: 1) personal safety and 2) to get a panoramic view of the play to see more players/blocks around the ball carrier.
